Papaya, Mango, & Shrimp Lettuce Wraps RECIPE

Hey everyone. Sorry to keep you waiting.  Here's a great recipe from the back of Annie Chun's All Natural Asian Cuisine Maifun Rice Noodles. It's delicious and worth trying.

Nothing is more fun to assemble than lettuce wraps. This version is with shrimp and our very yummy Thai Peanut sauce for a Thai version of this great wrap. Great as an appetizer for a party or interactive dinner fun with the family.
  • 1 green papaya, peeled and cut into matchstick slices
  • 1 slightly firm mango, peeled and sliced into matchstick strips
  • 1 small cucumber, thinly sliced
  • 1/2 package of Annie Chun's Maifun Rice Noodles (cooked, drained and rinsed as directed for salad)
  • 1 cup small to medium sized prawns, cleaned and cooked
  • 1 head of lettuce, leaves separated, rinsed (butter lettuce suggested)
  • 5-6 TBSP of Annie Chun’s Thai Peanut Sauce
  • 2 TBSP chopped fresh cilantro

  1. Mix papaya, mango, cucumber, cooked rice noodles, and prawns in bowl.
  2. Add peanut sauce to noodle mixture and toss.
  3. Arrange whole lettuce leaves on large platter and divide noodle salad among lettuce leaves.
  4. Garnish with fresh cilantro (if desired).
  5. Wrap lettuce leaves to enclose noodle mixture and enjoy.

Tree Nuts

Here's a list I have been putting together of different kind of trees that produce nuts which are harmful to someone with a tree nut allergies.  Be careful with cosmetics, they can affect you too.

Let's first discuss:   What is a Tree Nut Allergy?

Tree nut allergy is a hypersensitivity to dietary substances from tree nuts causing an overreaction of the immune system, may lead to severe physical symptoms.  Tree nuts include but not limited to; almonds, Brazil nuts, cashews and walnuts.

Tree nut allergy is one of the most common food allergies in children and adults. Tree nuts can cause a severe, potentially fatal, allergic reaction (anaphylaxis).

Medical experts advise that people with a tree nut allergy have quick access to an epinephrine auto-injector; such as an EpiPen® at all times.

It is best to avoid the allergen by any means necessary.

Ian's Chicken Nuggets

I must say I didn't know what to expect from this brand because they had to think hard to eliminate "harmful" foods. There is no soy, wheat or dairy. They are an uncooked breaded chicken. The breading tastes like corn meal. They tasted pretty good. I ate them with some Heinz Ketchup. They take 15 minutes on 400.
I like to mention that it reminds me of minced chicken. It does not taste like chicken breast.

Keep in mind, they put about 14 to 15 nuggets in a small box for $5.99.

Bottom Dollar Foods

Bottom Dollar Foods has to be one of my absolute favorite stores to go shop at. This store has some great prices for a lot of stuff. There are some things that are pricey and I buy elsewhere.

The first Bottom Dollar Food model was opened by Food Lion in High Point, NC., on September 21, 2005. Their intentions were to cater to the needs of discount grocery shoppers exclusively in North Carolina, Virginia, and Maryland. This store is becoming extremely popular in New Jersey, Ohio and Pennsylvania. I first started shopping at their Bensalem store in 2010; located at 2134 Street Road, Bensalem, PA 19020. I like the store so much I had found out a lot of information.

I learned that their company was based in Salisbury, NC. Bottom Dollar Foods is I called NC often to find out consumer information and future store openings in NJ. They are very informative and consumer oriented.
My family lives in Greensboro, NC. I frequent there a lot. In 2011, I noticed the Bottom Dollar Foods stores that I would see from I-95 were "disappearing." They started moving up here when their stores down south were bringing in revenue as anticipated.
I have to be very honest about the Bottom Dollar that was in NC. Food Lion is very expensive to shop at. Totally overpriced. I mentioned that because Bottom Dollar was supposed to help the low budget; in fact, it was expensive.

When Piggy Banks Fly...

When they broke ground for the Trenton location in NJ, I was ecstatic! I was at the ribbon cutting ceremony and I was very excited. The word of mouth about this grocery store to all kinds of people had paid off. There are now 13 stores in NJ.
