Adjusting to a gluten-free diet can be tricky, so it’s important to ensure you are getting all the nutrients you need to stay healthy. Fortunately, many of the healthiest foods, such as vegetables, fruits, beans/lentils, nuts and seeds, low-fat unflavored dairy products, lean meats, fish, and chicken are naturally gluten-free.
On the other hand, some gluten-free products increase the sugar or fat content to compensate for texture and flavor changes that can result from the removal of gluten. Look for products that do not have sugar, syrups, or fat listed high on the ingredient list.
While it may seem like a safe choice, don’t cut out grains altogether. Choose products with significant amounts of gluten-free whole grains, and flours made from these grains, instead of refined grains like white rice flour. Whole grains provide essential fiber, vitamins and minerals necessary for a balanced diet.
